Caravan Cafe is a small, woman-owned Uzbek kitchen in southeast Calgary serving the food we grew up with — Uzbek classics and Eastern European comfort food, cooked the way our grandmothers did.
The old Silk Road ran through our cuisine long before anyone thought to write it down. Dishes travel to our tables from Uzbekistan and the rest of the Silk Road — flaky somsa (samsa), a proper palov (plov) on the weekends, manti folded one at a time, hand-pulled lag'mon noodles, borsht on a cold Calgary afternoon.
We keep the menu short so we can cook it well. Nothing leaves the kitchen that we wouldn't serve our own family.

Plov (also called palov or pilaf) is Uzbekistan's national dish — slow-cooked rice with lamb, sweet carrots and saffron. UNESCO recognises it as Intangible Cultural Heritage of Humanity. We cook it in large batches on weekends.
